I had to restore my computer from backup. When I launched Postman, none of my environments, collections, or APIs were there.
How do I find them to get them back?

Were you logged into an account previously or using Postman without signing in?
Depending of the date you backed up your data, you could try exporting your data via the ⚙️ > Settings > Data menu options.
