Any recommendations for installing the desktop app with shared access for students in a lab? They would use their accounts to log in, looks like a single personal account is required to install it.

Welcome to the Postman Community! 
The application can be installed onto a/the machine with a personal account. Each user would then be able to login to their account but obviously not at the same time.
Controlling the process around users logging in and out of that single machine would need to be correctly managed, to ensure people and not using someone else’s account.
Ideally, each person would be using Postman on their own machine.
