Starting couple of weeks ago Postman stopped highlighting resolved variables.
Unresolved variables are highlighted in red as they should.
What I have tried to do:

It’s a little unclear from the image what you’re showing here - The dynamic variables wouldn’t be orange and hovering over them will should what they will be resolved to once the request is made.
For the other variables, I can see that you have ones that has resolved and ones like {{connect.revisionNo}} that are not.
There were recent (within the last 6 months) changes to the variable expierence in the platform:
