Collection merging and forking was a great feature provided by Postman if the collection can be protected which only allow merge request will be great to maintain the collection changes

I am assuming you are referring to only allowing certain users to merge changes into the collection, there is already an option to Manage roles for a specific collection which you can edit as shown in the updated image by clicking on the "… " next to the collection and clicking on Manage Roles where you can change the role for a user to Viewer if you want to disallow any merges from the particular user.
