Hello
I’m wanting to store a new variable in my collection but when selecting the ellipsis on the collection there is no edit option, does anyone know what the solution could be please?

Welcome to the Postman Community 
When you select the Collection from the left sidebar, it should open up a new tab. This has a number of sub menu options and one being Variables.
Are you able to see that?

Thanks for the welcome, I don’t see the sub menus as above this is what I see
You would need to click on the “New Collection” name in the left sidebar, that will open the Collection in a new tab on the Workbench.
You currently have the “Overview” tab open.
