This is driving me crazy! When I unintentionally click a json response that contains a URL, Postman opens a new tab, assuming I’m making a new request!
Follow link (Command+Click) is quite useful, but single click url creating new tab is extremely inconvenient, and if I dismiss the tab I unintentionally created, Postman will randomly move to a tab that is not my previous tab, thus the whole process is extremely frustrating!
Is there a method to stop this behaviour?

There is currently no way to disable this functionality. Clicking on a link in the response tab will open the link in a new request tab, while Command+Click will open the link in a new browser tab. This is a feature and not a bug.
We are always very eager to listen to feedback from our users and learn from their experiences. I will recommend that you submit a feature request here detailing how you feel we could better handle opening URLs in the response tab.
