I can update the initial values for global variables, but not the current ones. I tried typing them manually, then reset All, nothing works.

Can you share a bit more detail about what you have tried? When you type a value in the current value field, what happens? How are you ascertaining that this isn’t saved? An error, a reload? What happens when you click the save button?
It’ll be helpful to share a bit more information and maybe a screenshot of what you see to help us understand the issue better.
Hi, I’m sorry about the misleading description, creating new variables works, updating existing ones doesn’t.
I remove the text on a current value, type something else and when I click on Save, the value gets reset to what it was before.

What version of Postman are you on? Are on on Web or Desktop?
I am on Desktop, the latest version. I updated it today, but the issue started before I updated and it persisted afterwards.
I noticed that updating the variable works at times, especially if I click anywhere outside the field and then on Save. But even this fails half the time.
